Chocolate Mousse

Serves 6 people

Ingredients

  • 4 ounces unsweetened chocolate
  • 3/4 c sugar
  • 1/4 c water
  • 1 T cognac
  • 4 eggs, separated
  • whipped cream

Directions

  1. Melt chocolate in top of double boiler. Add sugar and water;stir until well blended. Add egg yolks, one at a time, beating vigorously. Remove from heat. Stir in cognac. Cool slightly. Beat egg whites until stiff. Fold into chocolate mixture. Chill for 6 hours.
