Ingredients
- 1 c vegetable oil
- 1 c sugar
- 1 c packed brown sugar
- 4 eggs
- 1 c flour
- 1 c wheat flour
- 2 t cinnamon
- 2 t baking soda
- 1/4 t salt
- 2 c grated carrots
- 8 ounce can crushed pineapple, drained, 2 T juice reserved
- 3/4 c chopped walnuts
- 6 ounces cream cheese at room temp
- 2T butter at room temp
- 1 t vanilla
- 3/4 c powdered sugar
- 2 T milk

Preheat oven to 350F Butter 9×13 inch baking pan. Using a mixer, combine first 4 ingredients. Sift together both flours, cinnamon, baking soda and salt. Mix into liquid ingredients. Stir in carrots, pineapple, reserved juice and walnuts. Pour into prepared pan. Bake until tester comes out clean, about 45 minutes.

Using the mixer, combine cream cheese, butter and vanilla. Beat in the powdered sugar, alternately with the milk. Spread on the cake.
