Blueberry Chutney

Ingredients
- 1 large Granny Smith apple, peeled and diced
- 1/2 cup sugar
- 1/2 cup orange juice
- 1 Tbsp. grated orange rind
- 1 tsp. ground ginger
- 1/4 to 1/2 tsp. dried crushed red pepper
- 1/4 tsp. ground black pepper
- 4 cups fresh or frozen blueberries
- 3 Tbsp. balsamic vinegar
Directions
- Bring first 7 ingredients to a boil in a medium saucepan. Reduce heat to low; simmer, stirring occasionally, 15 minutes or until apple is tender. Stir in blueberries and vinegar; bring to a boil. Reduce heat to medium; cook, stirring occasionally, 40 minutes or until thickened.
