Blueberry Chutney

Ingredients

  • 1 large Granny Smith apple, peeled and diced
  • 1/2 cup sugar
  • 1/2 cup orange juice
  • 1 Tbsp. grated orange rind
  • 1 tsp. ground ginger
  • 1/4 to 1/2 tsp. dried crushed red pepper
  • 1/4 tsp. ground black pepper
  • 4 cups fresh or frozen blueberries
  • 3 Tbsp. balsamic vinegar

Directions

  1. Bring first 7 ingredients to a boil in a medium saucepan. Reduce heat to low; simmer, stirring occasionally, 15 minutes or until apple is tender. Stir in blueberries and vinegar; bring to a boil. Reduce heat to medium; cook, stirring occasionally, 40 minutes or until thickened.
  2. makes 3 cups.
