Horseradish Relish

serve with roast beef

Ingredients

  • 1 (8oz.) container sour cream
  • 1/4 cup prepared horseradish
  • 2 Tbsp. red wine vinegar
  • 2 1/2 tsp. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. dry mustard
  • Dash of coarsely ground pepper
  • 2 (15oz.) cans cut beets, rinsed well-drained, and diced

Directions

  1. Stir together first 7 ingredients. Add beets, stirring gently until blended. Chill at least 4 hours.
  2. makes 4 cups.
