Ingredients
- 1 fresh pineapple, chopped*
- 1 (7oz.) can flaked coconut
- 1 large red bell pepper, chopped
- 1/4 cup minced purple onion
- 2 jalapeno peppers, seeded and minced
- 3 Tbsp. rice wine vinegar
- 1 tsp. salt
- 1 1/4 tsp. chili powder
Directions
- Combine all ingredients. Cover and chill at least 4 hours. Serve with pork, chicken or fish.
