Pineapple-Coconut Relish

Ingredients

  • 1 fresh pineapple, chopped*
  • 1 (7oz.) can flaked coconut
  • 1 large red bell pepper, chopped
  • 1/4 cup minced purple onion
  • 2 jalapeno peppers, seeded and minced
  • 3 Tbsp. rice wine vinegar
  • 1 tsp. salt
  • 1 1/4 tsp. chili powder

Directions

  1. Combine all ingredients. Cover and chill at least 4 hours. Serve with pork, chicken or fish.
  2. makes 5 1/2 cups

  3. *1 (20 oz.) can pineapple tidbits in juice, drained and chopped, may be substituted.
