Ice Cream Gelatin Dessert

Ingredients

  • 1 (3oz.) pkg. gelatin, any flavor
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 cup vanilla ice cream (or your favorite flavor)
  • 1 cup canned fruit, drained (fruit cocktail, sliced peaches or mandarin oranges)

Directions

  1. Dissolve gelatin with boiling water in an 8-inch or 9-inch metal pan. (The pan helps the gelatin cool faster.) Then remove 1/2 cup and pour into a bowl. Add 1/2 cup cold water to the gelatin in the pan and place in the freezer until it thickens (10-15 minutes).
  2. Meanwhile, add 1 cup ice cream to the gelatin in the bowl; stir until smooth. Remove thickened gelatin from the freezer and, if desired, stir in fruit, reserving a few pieces for garnish.
  3. Spoon thickened gelatin and fruit into individual dessert glasses.
  4. Top with ice cream/ gelatin mixture. Chill 30 minutes. Garnish and serve.
