Ingredients
- 1/2 cup peanut butter
- 1/2 cup white corn syrup
- 2 cups crisp rice cereal
- 2 quarts ice cream such as Butter Brickle or butter pecan, slightly softened
- Caramel ice cream topping
- Toasted nuts or chocolate shell topping, optional
Directions
- Coat a 10-inch pie plate with oil.
- Combine peanut butter and syrup and mix well. Add the rice cereal and mix well.
- Mold cereal mixture into the bottom of the prepared pie plate. Using waxed paper to press mixture helps to form the crust.
- Fill crust with ice cream. Packing it don into crust and smooth. Drizzle caramel topping over ice cream, then top with nuts or chocolate shell, if desired. Cover tightly with plastic wrap and freeze until ready to serve. let sit out about 10 minutes before slicing.
