Roasted Spiced Chickpeas

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 (15 oz.) cans chickpeas, drained, rinsed and patted dry
  • 1 Tsp. ground red pepper (cayenne)
  • 1 Tbsp. cumin seed
  • Coarse salt

Directions

  1. Heat oven to 450 degrees.
  2. Pour the oil on a rimmed baking sheet and heat in oven until hot, about 3 minutes.
  3. Meanwhile, in a large bowl, combine the chickpeas, cayenne and cumin/ Season with salt.
  4. Spread chickpea mixture in a single layer on the hot baking sheet. Bake, stirring halfway through, until the chickpeas are crisp, about 12 minutes. Using a slotted spoon, transfer the chickpeas to paper towels to drain and cool slightly before serving.
