Roasted Spiced Chickpeas

Ingredients
- 1/4 cup extra-virgin olive oil
- 2 (15 oz.) cans chickpeas, drained, rinsed and patted dry
- 1 Tsp. ground red pepper (cayenne)
- 1 Tbsp. cumin seed
- Coarse salt
Directions
- Heat oven to 450 degrees.
- Pour the oil on a rimmed baking sheet and heat in oven until hot, about 3 minutes.
- Meanwhile, in a large bowl, combine the chickpeas, cayenne and cumin/ Season with salt.
- Spread chickpea mixture in a single layer on the hot baking sheet. Bake, stirring halfway through, until the chickpeas are crisp, about 12 minutes. Using a slotted spoon, transfer the chickpeas to paper towels to drain and cool slightly before serving.
