Lemon Ice Cream Trifle

Ingredients

  • 1/3 cup butter or margarine
  • 2 tsp. grated lemon peel
  • 1/3 cup lemon juice
  • 1/4 tsp. salt
  • 1 cup sugar
  • 3 eggs, beaten
  • 1 pkg. frozen pound cake (about 11 1/4 oz.)
  • 3 pints vanilla ice cream

Directions

  1. Melt butter or margarine in top of double boiler. Add lemon peel and juice, salt and sugar; blend in beaten eggs thoroughly. Cook over boiling water, stirring constantly, until thick and smooth. Remove from heat; cool thoroughly. Cut cake into slices about 1/2 inch thick. Line bottom of 2-quart bowl with cake slices. Soften ice cream slightly. Pack one-third the ice cream over cake slices; spoon about 1/3 of the cooled lemon sauce over ice cream. Repeat layers twice. Swirl to layer with spatula for pretty top. Freeze several hours or until firm.
