Light Strawberry Sherbet

Ingredients

  • 1 cup nonfat milk
  • 1/4 cup sugar
  • 2 Tbsp. nonfat dry milk
  • 1 cup finely chopped strawberries
  • 1 1/2 tsp. lemon juice
  • 1 tsp. vanilla extract

Directions

  1. In a small, heavy saucepan, put the milk, sugar and dry milk. Stir over medium heat until the sugar and dry milk have dissolved. Pour the milk into a bowl, cover with plastic wrap and chill in the refrigerator for at least 1 hour.
  2. Stir the strawberries, lemon juice and vanilla into the milk mixture. Pour the mixture into an ice cream maker and churn following manufacturer’s directions, about 30 minutes.
