Light Watermelon Sherbet

Ingredients

  • 2 cups cubed watermelon
  • 2 eggs
  • 3/4 cup sugar
  • 1/8 tsp. salt
  • 1 quart half-and-half
  • 1 Tbsp. vanilla extract

Directions

  1. Place watermelon in container of electric blender; process until smooth. Pour the watermelon puree through a strainer, reserving 1 cup juice; discard the pulp.
  2. Beat eggs at medium speed of electric mixer until frothy. Combine sugar and salt; gradually add to eggs, beating until thick. Stir in half-and-half, vanilla and watermelon juice.
  3. Pour juice mixture into freezer can of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer’s instructions. let ripen at least 1 hour before serving.
  4. makes about 1/2 gallon.
