Magic Chocolate Ice Cream

Ingredients

  • 1 tsp. instant coffee granules OR espresso powder
  • 1 Tbsp. hot water
  • 4 oz. bittersweet chocolate, finely chopped
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp. vanilla extract
  • Pinch salt
  • 1 cup heavy cream, well chilled

Directions

  1. Combine coffee or espresso powder and hot water in a small bowl.
  2. Let stand until coffee dissolves, about 5 minutes.
  3. Microwave chocolate, sweetened condensed milk, and coffee mixture in a bowl, stirring every 10 seconds, until chocolate is melted, about 1 minute.
  4. Stir in vanilla and salt. let cool.
  5. Whip cream to soft peaks. Whisk 1/3 of whipping cream into chocolate mixture. Fold remaining whipped cream into chocolate mixture until incorporated.
  6. Transfer to a freezer-safe container with an airtight lid and freeze until firm, at least 6 hours.
  7. makes about 1 quart
