Mango Granita

Ingredients

  • 2 cups water
  • 2 cups granulated sugar
  • Juice of 4 limes
  • 2 lb. mangoes, peeled and cut into chunks
  • 1/2 tsp. vanilla extract
  • Pinch ground cardamom

Directions

  1. In medium saucepan over medium heat, combine water and sugar. Bering to a boil, stirring frequently, and cook until sugar is dissolved and mixture is clear, about 5 minutes. Transfer syrup to a bowl, cover with plastic wrap and refrigerate until cold. The sugar syrup can be made up to 5 days in advance.
  2. In a blender, combine sugar syrup, lime juice, mango chunks, vanilla and cardamom and process until smooth.
  3. Pour mixture into a large, shallow baking dish and freeze for 1 hour. Using a fork, break up ice crystals on bottom and sides of pan. Repeat this process every hour for 3 to 4 hours, or until mixture is frozen and has the consistency of a snow cone.
