Minted Orange Parfait

Ingredients

  • 1/4 cup mint jelly
  • 2 Tbsp. orange juice concentrate
  • 1/2 tsp. vanilla extract
  • 1 10oz. can well-drained mandarin oranges (save 4 pieces for garnish.)
  • 2 large mint leaves
  • 2-3 tsp. orange liqueur (optional)1 pint vanilla ice cream

Directions

  1. Chill 4 parfait glasses.
  2. In food processor, mix together; mint jelly, orange juice concentrate, vanilla extract, mandarin oranges and mint leaves. Pulse for 15-20 seconds. Add orange liqueur, if desired. Chill 10 minutes.
  3. Place a small scoop of ice cream in chilled parfait glass. top wit 1 Tbsp. orange mixture. Add 2 more scoops of ice cream, topping each with 1 Tbsp. orange mixture. Repeat with remaining parfait glasses. Top parfaits with whipped cream.
  4. Garnish each with a mandarin orange slice and mint. Serve at once.
