Ingredients
- 2 T olive oil
- 1 small onion, chopped
- 1/2 green pepper, diced
- 1 eggplant, diced
- 1 zucchini, diced
- 2 large tomatoes, peeled, seeded and diced
- 1 T minced fresh basil or 1 t dried
- 1 t minced fresh thyme or 1/4 t dried
Directions

Heat 2 T olive oil in heavy large skillet over medium heat. Add minced onion and diced bell pepper and saute until onion is tender, about 8 minutes. Add diced eggplant and zuchini and cook until vegetables are tender, stirring occasionally, about 15 minutes. Stir in tomatoes, basil and thyme. Continue cooking 5 minutes. Season to taste with salt and pepper
