Ingredients
- 1 heaping tsp. unflavored gelatin
- 3/4 cup cold water, divided use
- About 1 lb. ripe strawberries, hulled and chopped
- About 6 oz. ripe blackberries
- 1 cup granulated sugar (less of berries are sweet)
- 1 cup milk OR half-and-half
- Juice of 1 lime
Directions
- in a small bowl, sprinkle gelatin over 1/2 cup of the water; set aside.
- In a saucepan, combine berries and the remaining 1/4 cup water and cook over low heat just until berries begin to break down, about 5 minutes. Mash with the back of spoon to desired consistency. I kept mine fairly chunky.
- Transfer berries to a glass bowl and combine with the softened gelatin and the sugar; stirring to dissolve sugar. Cover and refrigerate until well chilled, about 2 hours.
- Add half-and-half and lime juice and transfer mixture to an ice cream freezer and freeze according to manufacturer’s instructions.
