Mocha Ice Cream

Ingredients

  • 4 cups chocolate low-fat ice cream
  • 1/4 cup Kahlua (coffee-flavor liqueur)
  • 1 Tbsp. instant coffee granules
  • 2 oz. bittersweet chocolate, finely chopped

Directions

  1. Place a large bowl in freezer. Let ice cream stand at room temperature 45 minutes or until softened.
  2. Combine liqueur and coffee granules in a small bowl. Microwave at high 30 seconds, stir until coffee dissolves. Cool.
  3. With a rubber spatula or stand mixer combine softened ice cream, coffee mixture, and chopped chocolate in chilled bowl. Cover and freeze to desired consistency.
