Mountain Man Meatloaf

Ingredients

  • 1 medium onion
  • 1 lb. lean ground beef, venison and/or elk
  • 1 large egg
  • 1 can (10.75-oz.) Campbell's Beef with Barley Soup
  • 1/2 tsp. salt
  • 1/4 cup chopped bell pepper
  • 1 cup tomato or V8 juice
  • 1-2 cups oatmeal
  • 1/2 cup ketchup

Directions

  1. Heat oven to 350 degrees. Grease two round cake pans or on 8 x8 x2-inch pan. Grate onion into mixing bowl. Add meat, egg, soup, salt, pepper, bell pepper, juice and 1 cup oatmeal; combine. Adjust oatmeal to make very moist mixture (too much oatmeal will make meatloaf dry).
  2. Spread meatloaf in pan. Do not allow mixture to touch sides of pan. Cover with ketchup. Bake 60-90 minutes, until meat is done.
