Mountain Man Meatloaf

Ingredients
- 1 medium onion
- 1 lb. lean ground beef, venison and/or elk
- 1 large egg
- 1 can (10.75-oz.) Campbell's Beef with Barley Soup
- 1/2 tsp. salt
- 1/4 cup chopped bell pepper
- 1 cup tomato or V8 juice
- 1-2 cups oatmeal
- 1/2 cup ketchup
Directions
- Heat oven to 350 degrees. Grease two round cake pans or on 8 x8 x2-inch pan. Grate onion into mixing bowl. Add meat, egg, soup, salt, pepper, bell pepper, juice and 1 cup oatmeal; combine. Adjust oatmeal to make very moist mixture (too much oatmeal will make meatloaf dry).
- Spread meatloaf in pan. Do not allow mixture to touch sides of pan. Cover with ketchup. Bake 60-90 minutes, until meat is done.
