Ingredients
- 6 passion fruit
- 1 1/4 cup non-fat vanilla yogurt
- 1 egg yolk
- 3 egg whites
- 2 Tbsp. sugar
- 1 cup sliced bananas
- 1 cup sliced kiwi or strawberries
- 1 cup sliced ripe pears or peaches
Directions
- Remove pulp from passion fruit, Place in bowl with yogurt and egg yolk. Whisk until blended. In a separate bowl whip egg whites with sugar until stiff. Fold egg whites into fruit and yogurt mixture. Freeze for 1 hour. To serve, remove soufflé from freezer and wait 10 minutes before alternating with layers of sliced fruit into tall stemmed glasses. Garnish with a slice of kiwi or strawberry.
