Passion Fruit Frozen Souffle

Ingredients

  • 6 passion fruit
  • 1 1/4 cup non-fat vanilla yogurt
  • 1 egg yolk
  • 3 egg whites
  • 2 Tbsp. sugar
  • 1 cup sliced bananas
  • 1 cup sliced kiwi or strawberries
  • 1 cup sliced ripe pears or peaches

Directions

  1. Remove pulp from passion fruit, Place in bowl with yogurt and egg yolk. Whisk until blended. In a separate bowl whip egg whites with sugar until stiff. Fold egg whites into fruit and yogurt mixture. Freeze for 1 hour. To serve, remove soufflé from freezer and wait 10 minutes before alternating with layers of sliced fruit into tall stemmed glasses. Garnish with a slice of kiwi or strawberry.
