Peanut Butter Ice Cream

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 3/4 cup crunchy peanut butter
  • 6 cups milk
  • 1 quart half-and-half
  • 1 Tbsp. vanilla extract
  • 1 tsp. salt

Directions

  1. Beat eggs with electric mixer at medium speed until frothy. Gradually add sugar, beating until thick. Add peanut butter, beating until blended. Add remaining ingredients; mix well.
  2. Pour mixture into freezer can of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer’s instructions. Let ripen at least 1 1/2 hours.
  3. makes about a gallon.
