Ingredients
- 6 egg yolks
- 2 cups milk
- 1 cup sugar
- 1/4 tsp. salt
- 2 cups heavy cream
- 1 Tbsp. pure vanilla extract
- 2 cups mashed ripe peaches, sweetened with 1/2 cup sugar
Directions
- In top part of double boiler, beat egg yolks and milk until well blended. Stir in 1 cup sugar and the salt. Cook, stirring, over hot, not boiling, water until thick and mixture coats a metal spoon. Cool, then cover. Refrigerate until chilled. Stir in cream, vanilla and peach mixture.
- Pour into freezer container. Follow manufacturer’s instructions for either crank or electric mixer. Then pack, add more crushed ice and salt, cover well and let ripen at least 2 hours.
