Peach Ice Cream

Ingredients

  • 6 egg yolks
  • 2 cups milk
  • 1 cup sugar
  • 1/4 tsp. salt
  • 2 cups heavy cream
  • 1 Tbsp. pure vanilla extract
  • 2 cups mashed ripe peaches, sweetened with 1/2 cup sugar

Directions

  1. In top part of double boiler, beat egg yolks and milk until well blended. Stir in 1 cup sugar and the salt. Cook, stirring, over hot, not boiling, water until thick and mixture coats a metal spoon. Cool, then cover. Refrigerate until chilled. Stir in cream, vanilla and peach mixture.
  2. Pour into freezer container. Follow manufacturer’s instructions for either crank or electric mixer. Then pack, add more crushed ice and salt, cover well and let ripen at least 2 hours.
  3. makes 1 1/2 quarts
