Philadelphia Peach Ice Cream

Ingredients
- 4 cups peeled, sliced fresh peaches (about 6 medium-size ripe peaches)
- 1/4 cup sugar
- 3 Tbsp. fresh lemon juice
- 1 tsp. pure vanilla extract
- 1/2 tsp. pure almond extract
- 1/8 tsp. salt
- 2 cups heavy cream, chilled
Directions
- In a food processor fitted with the metal blade or a blender, combine the peaches, sugar, lemon juice, vanilla, almond extract, and salt. Process or blend until the mixture is pureed. Transfer the mixture to a medium bowl. Stir in the cream. Pour the mixture into an ice cream maker and freeze according to the manufacturer’s directions.

Brandied Peach Pistachio Sundae
- Peel, pit and slice 2 medium-size ripe peaches. In a medium bowl, combine the peaches with 1/4 cup brandy and 1 Tbsp. fresh lemon juice; let stand for 30 minutes. Place a generous scoop of Philadelphia Peach Ice Cream into each of 4 chilled dessert dishes. Spoon the brandied peaches over ice cream. Top with whipped cream and chopped pistachios.
