Ingredients
- 3 (20 oz.) cans crushed pineapple packed in its own juice
- 1 Tbsp. cornstarch
- 3/4 cup chopped pecans
- 1/4 cup flaked coconut
- 3 Tbsp. Grand Marnier or other orange-flavored liqueur
Directions
- Drain pineapple, reserving 3/4 cup juice. Combine cornstarch and 1/4 cup reserved juice in a 3-quart casserole; mix until cornstarch is dissolved. Add remaining juice and pineapple. Microwave at high for 2 to 3 minutes or until thickened, stirring at 1 minute intervals. Stir in pecans, coconut and Grand Marnier. Spoon into 1/2 pint jars; refrigerate.
- To reheat in microwave; remove metal lid, and microwave at high for 1 to 2 minutes or until warm, stirring after 1 minute. Or spoon into a small saucepan, and cook over low heat 3 to 4 minutes or until warm, stirring constantly.
