Pumpkin Ice Cream Sqaures

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 cups cooked pumpkin puree
- 1/2 cup firmly packed dark brown sugar
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1 quart vanilla cream, softened
- Cocoa, optional
Directions
- In a small bowl, mix crumbs with granulated sugar and butter. Press into 9-inch square pan.
- In a medium bowl, combine pumpkin, brown sugar, salt, cinnamon, ginger and cloves. Fold in softened ice cream. Spread in crumb-lined pan. Cover and freeze until firm.
- Cut into 3 by 3 inch squares; serve on chilled plates. If desired, sift cocoa through a decorative template over each square.
