Rocky Road Ice-Cream Dessert

Ingredients

  • 50 Nilla wafers
  • 1/4 cup butter or margarine, melted
  • 2 Tbsp. sugar
  • 1 (6 oz.) can whole honey-coated almonds, coarsely chopped and divided
  • 1/2 gallon chocolate ice cream, softened
  • 2 cups miniature marshmallows
  • 1 (8oz.) container frozen whipped topping, thawed

Directions

  1. Place vanilla wafers in a heavy-duty zip-top bag, and crush with a rolling pin. Set aside 1/4 cup crumbs.
  2. Stir together remaining crumbs, butter, and sugar; press into bottom of a 9-inch springform pan.
  3. Stir together 1 cup chopped almonds, chocolate ice cream, and marshmallows; spread over crumb crust. Top with whipped topping. Cover and freeze 4 hours or until firm. Sprinkle dessert with remaining crushed wafers and 1/4 cup chopped almonds.
