Ingredients
- 1/2 cup butter
- 1 cup all-purpose flour
- 1/4 cup firmly packed brown sugar
- 1/2 cup finely chopped pecans
- 2 egg whites
- 1 (10oz.) pkg. frozen sliced strawberries, slightly thawed
- 2/3 cup sugar
- 2 Tbsp. lemon juice
- 1 cup whipping cream
- !hole fresh strawberries (optional)
Directions
- Melt butter in a 13 × 9 × 2 inch baking pan. Add flour, brown sugar, and pecans; mix well. pat out evenly in pan. Bake at 350 degrees for 10 minutes. Stir and bake 10 minutes longer. Cool; remove one-third of crumbs for topping. Pat remaining crumbs smoothly in pan.
- Beat egg whites, sliced strawberries, sugar and lemon juice on high speed of an electric mixer for 15 minutes.
- Beat whipping cream until light and fluffy; fold into strawberry mixture. Spread mixture over crust in pan, and sprinkle with remaining crumbs.
- Cover tightly with aluminum foil and freeze. Cut into squares, and garnish with whole strawberries, if desired.
