For Best-Ever Catfish Spread, substitute 1/2 lb. catfish fillets for crabmeat. Sprinkle fish with 1/4 tsp. salt and 1/4 tsp. pepper. Place on a lightly greased broiler pan, and bake at 350 degrees for 20 minutes or until fish flakes easily with fork. Cool, break into 1/2-inch pieces, and prepare spread as directed.
