Double Stuffed Spinach-and-Bacon Eggs

Ingredients

  • 1 (9oz.) pkg. Stouffer's creamed spinach
  • 12 hard-cooked eggs
  • 1/3 cup instant potato flakes
  • 1/2 cup mayonnaise
  • 1 Tbsp. Dijon mustard
  • 5 bacon slices, cooked and crumbled
  • 3 green onions, minced
  • Paprika (optional)

Directions

  1. Thaw creamed spinach in microwave at medium 5 to 6 minutes.
  2. Peel eggs; cut in half lengthwise. Carefully remove yolks; mash yolks and potato flakes with a fork. Stir in creamed spinach, mayonnaise, and next 3 ingredients. Stuff egg whites generously with yolk mixture. Sprinkle with paprika, if desired. Chill, if desired.
