Ingredients
- 3 c water
- 2/3 c each barley, lentils, brown rice
- 1/4 c vegetable oil
- 2 grated carrots
- 1 c chopped celery
- 1/4 c crushed walnuts or other nuts
- 1 T garlic
- 1 t basil
- 1/2 t thyme and oregano
- 4 eggs
- 7 T flour
Directions

Bring water to a boil. Stir in barley, rice and lentils. Cover and cook until tenter, about 40 minutes. Heat oil, add veggies, nuts and garlic. Saute until tender. Add seasonings. Mix grans with veggies. Cool. Stir beaten eggs and flour into grains mixture. Press 1/2 c between hands to form patties. Heat oil in a skillet. Cook patties 5 minutes each side. Serve in pita pockets with lettuce, tomato, condiments. Can split grain mixture in half and freeze before adding egg and flour. Makes 14 patties.
