Ingredients
- 2 cups cooked, drained pink-eyed peas
- 1 cup fresh corn kernels
- 1/2 large purple onion, finely chopped
- 2 Tbsp. chopped fresh cilantro
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 1/4 tsp. salt
Directions
- Stir together all ingredients; chill 1 hour. Serve with grilled pork or chicken.
