Pink Eyed Pea Salsa

Ingredients

  • 2 cups cooked, drained pink-eyed peas
  • 1 cup fresh corn kernels
  • 1/2 large purple onion, finely chopped
  • 2 Tbsp. chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 tsp. salt

Directions

  1. Stir together all ingredients; chill 1 hour. Serve with grilled pork or chicken.
  2. makes about 4 cups
