Ingredients
- 1 large purple onion, chopped
- 2 garlic cloves, chopped
- 2 Tbsp. balsamic vinegar
- 1 Tbsp. olive oil
- 4 small California Avocados, peeled
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. dried Italian seasoning
- Tortilla chips
Directions
- Toss together first 4 ingredients, and place on an aluminum foil-lined pan.
- Bake at 425 degrees for 25 to 30 minutes or until lightly browned, stirring once. Cool.
- Mash avocados in a medium bowl; stir in onion mixture, lemon juice, salt and Italian seasoning. Chill 1 hour. Serve with chips.
