Shrimp Dip

Ingredients

  • 7 1/2 cups water
  • 2 1/2 lbs. unpeeled, medium-size fresh shrimp
  • 1/2 green bell pepper, quartered
  • 1/2 large onion, quartered
  • ` garlic clove
  • 1 (8oz.) pkg. cream cheese, softened
  • 3 Tbsp. mayonnaise
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1 tsp. hot sauce
  • Garnish: cooked, peeled shrimp

Directions

  1. Bring 7 1/2 cups water to a boil; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water; peel shrimp, and devein.
  2. Pulse shrimp in a food processor 4 to 5 times or until chopped. Transfer to a large bowl.
  3. Pulse bell pepper, onion, and garlic in processor until chopped; add to shrimp.
  4. Process cream cheese and next 4 ingredients in processor until fluffy. Stir into shrimp mixture. Chill, if desired. Garnish, if desired.
