Ingredients
- 7 1/2 cups water
- 2 1/2 lbs. unpeeled, medium-size fresh shrimp
- 1/2 green bell pepper, quartered
- 1/2 large onion, quartered
- ` garlic clove
- 1 (8oz.) pkg. cream cheese, softened
- 3 Tbsp. mayonnaise
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1 tsp. hot sauce
- Garnish: cooked, peeled shrimp
Directions
- Bring 7 1/2 cups water to a boil; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water; peel shrimp, and devein.
- Pulse shrimp in a food processor 4 to 5 times or until chopped. Transfer to a large bowl.
- Pulse bell pepper, onion, and garlic in processor until chopped; add to shrimp.
- Process cream cheese and next 4 ingredients in processor until fluffy. Stir into shrimp mixture. Chill, if desired. Garnish, if desired.
