Tapenade

classic olive spread for grilled fish, or vegetables on sliced focaccia

Ingredients
- 1 (6oz.) jar pitted kalamata olives, drained
- 1 anchovy fillet, rinsed
- 2 garlic cloves, chopped
- 1 small shallot, chopped
- 1 tsp. capers
- 1/4 cup olive oil
- 1 Tbsp. lemon juice
- 1 Tbsp. chopped fresh parsley
- Garnish: olives, lemon slice, fresh parsley
Directions
- Process first 5 ingredients in a food processor until smooth. With processor running, pour oil through food chute, stopping to scrape down sides. Stir in lemon juice and chopped parsley. Garnish, if desired.
