Popover Pancake

Ingredients

  • 1/2 Cup Flour
  • 1/2 Cup Milk
  • 2 Eggs Beaten Lightly
  • 1/4 Cup Butter
  • 2 Tablespoons Powdered Sugar
  • 1/2 Lemon

Directions

  1. 1) Mix Ingredients leaving Battery slightly lumpy.

  2. (Do not mix in Powdered Sugar, Butter, or Lemon)

  3. 2) In a cassarole dish or skillet, heat the 1/4C butter until very hot.

  4. 3) Pour in batter.

  5. 4) Place in 425 degree oven and bake for 20 minutes or until pancake is puffed up all around the sides and golden brown.

  6. 5) Remove from oven and sprinkle with powdered sugar and Juice from 1/2 lemon.

  7. 6) Return to oven for 2 to 3 minutes or until pancake is glazed.
