Warm Sausage and Potato Salad

Ingredients
- 10 oz. small new potatoes, quartered
- 1 small leek, rinsed well
- 6 oz. light smoked turkey sausage
- 1 tsp. olive oil
- 1/2 small green pepper, chopped
- 2 Tbsp. red wine vinegar
- 1 Tbsp. water
- 1 Tbsp. whole grain mustard
- 1/2 tsp. snipped fresh thyme or 1/4 tsp. dried thyme, crushed
Directions
- Cook potatoes in a small amount of boiling salted water, covered, for 12 to 15 minutes or until tender. Drain, set aside. Slice white portion and 1 inch of the green portion of leek; separate green leek pieces from white, and set both portions aside.
- Cut sausage into 1/2-inch thick slices. heat oil in aq large nonstick skillet. Cook sausage over medium heat, uncovered, 2 to 3 minutes. Stir in white part of leek and green pepper. Cook and stir 2 to 3 minutes. Stir in vinegar, the water, mustard, thyme, and green portion of leek. Cook and stir 1 minute. Transfer with potatoes to a bowl; gently toss.
