Cheddar’d Summer Squash

Ingredients

  • 4 small yellow summer squash and/or zucchini, trimmed and cut in half lengthwise
  • Nonstick cooking spray 9optional)
  • 1/4 cup finely chopped green onion
  • 1/8 tsp. salt
  • Freshly ground black pepper
  • 2 ox. shredded reduced-fat sharp cheddar cheese (1/2 cup)

Directions

  1. Preheat oven to 400 degrees. Arrange yellow squash and/or zucchini, cut side up, in a 3-quart baking dish.
  2. Lightly coat squash, with cooking spray, if desired. Sprinkle green onion, salt, and pepper evenly over all; top with cheese. Bake, uncovered, for 20 minutes or until squash is just tender and cheese is melted.
