Fusilli with Arugula, Tomaotes, and Olives

Ingredients

  • 8 oz. dried fusilli pasta
  • 2 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 1/4 tsp. crushed red pepper
  • 4 cups torn arugula
  • 1/4 tsp. salt
  • 2 medium roma tomatoes, chopped
  • 3/4 cup pitted nicoise or kalamata olives, halved
  • 2 Tbsp. snipped fresh parsley
  • 2 oz. grated Romano cheese (1/4 cup)

Directions

  1. Cook pasta according to package directions. Drain and keep warm.
  2. meanwhile, heat olive oil in a large skillet. Cook garlic and red pepper in hot oil for 1 minutes or until garlic is tender. Stir in arugula and salt. Cook and stir over medium heat just until arugula begins to wilt. Stir in tomatoes, olives, and parsley, heat through. Toss with hot cooked pasta. Sprinkle with Romano cheese.
