Ingredients
- 2 medium cucumbers, peeled, halved lengthwise, and seeded
- 1 8oz. carton plain low-fat yogurt
- 1 Tbsp. lime juice
- 1 tsp. honey
- 1/2 tsp. ground cumin
- 1/4 tsp. salt
- 1/3 cup snipped fresh mint
- Shredded cucumber
Directions
- Coarsely chop cucumber halves; place in a blender or food processor with yogurt, lime juice, honey, cumin, and salt. Cover and blend or process until smooth. Stir in snipped mint. Cover and chill for 2 to 24 hours. Stir before serving. Garnish with shredded cucumber.
