Cucumber-Mint Soup

Ingredients

  • 2 medium cucumbers, peeled, halved lengthwise, and seeded
  • 1 8oz. carton plain low-fat yogurt
  • 1 Tbsp. lime juice
  • 1 tsp. honey
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/3 cup snipped fresh mint
  • Shredded cucumber

Directions

  1. Coarsely chop cucumber halves; place in a blender or food processor with yogurt, lime juice, honey, cumin, and salt. Cover and blend or process until smooth. Stir in snipped mint. Cover and chill for 2 to 24 hours. Stir before serving. Garnish with shredded cucumber.
