Ingredients
- 8 oz. fresh or frozen salmon fillets, cut into two 1-inch thick portions
- 1/2 tsp. 1 tsp. reduced sodium soy sauce
- 1/4 tsp. lemon-pepper seasoning or freshly ground black pepper
- 1 small orange, thinly sliced
- 1 cup small broccoli florets
- 1/2 cup reduced-sodium chicken broth
- 1/3 cup water
- 1 clove garlic, minced, or 1 tsp. purchased mince toasted garlic
- 1/8 tsp. salt
- 1/2 cup quick-cooking regular or whole wheat couscous
Directions
- Thaw fish, of frozen.
- Preheat oven to 450 degrees. Place the fish in a greased baking pan, tucking under any thin edges. Drizzle with soy sauce. Sprinkle fish with lemon-pepper seasoning.

Arrange the orange slices on top of fish. Bake, covered, for 8 to 12 minutes or until fish flakes easily with fork.
- Meanwhile, combine the broccoli, broth, the water, garlic, and salt in a medium saucepan. Bring just to boiling; reduce heat. Simmer, covered, about 3 minutes or just until broccoli is crisp-tender. Stir in couscous. remove saucepan from heat. Cover and let stand for 5 minutes.
- To serve, spoon the couscous mixture onto a serving platter. Arrange the orange-topped fish on the couscous mixture.
