Tikka Paste

Ingredients

  • 2 Tbsp cumin seeds
  • 2 Tbsp coriander seeds
  • 6 cloves garlic, crushed
  • 2 Tbsp paprika
  • 1 Tbsp garam masala
  • 1 Tbsp ground ginger
  • 1 Tbsp turmeric
  • 1 Tbsp mint, dried or fresh
  • 1 tsp salt
  • 2 or 3 tsp chilli powder
  • 1 tsp lemon juice
  • 2 Tbsp water
  • 180ml of red wine vinegar
  • 150 ml olive oil

Directions

  1. Grind the cumin and coriander seeds finely in a mortar and pestle, and add to all the other ingredients save the oil.

  2. Heat the oil in a frying pan and cook the spice mixture for 10 minutes. Cool & store in sterilised jars.
