Ingredients
- 2 Tbsp cumin seeds
- 2 Tbsp coriander seeds
- 6 cloves garlic, crushed
- 2 Tbsp paprika
- 1 Tbsp garam masala
- 1 Tbsp ground ginger
- 1 Tbsp turmeric
- 1 Tbsp mint, dried or fresh
- 1 tsp salt
- 2 or 3 tsp chilli powder
- 1 tsp lemon juice
- 2 Tbsp water
- 180ml of red wine vinegar
- 150 ml olive oil

Grind the cumin and coriander seeds finely in a mortar and pestle, and add to all the other ingredients save the oil.

Heat the oil in a frying pan and cook the spice mixture for 10 minutes. Cool & store in sterilised jars.
