Spicy Vegetable Soup

Ingredients

  • 1 lb. smoked sausage, cut into slices
  • 1 lb. ground beef
  • 1 onion, chopped
  • 4 medium potatoes, cubed
  • 4 carrots, peeled and sliced thin
  • 3/4 cup celery, chopped
  • 2 15 oz. can Veg-All
  • 1 11oz. can corn
  • 1 can Rotel tomatoes and peppers
  • 1 can chili beans
  • 1 23 oz. can tomato juice

Directions

  1. In a large pot, brown ground beef and onion. Drain excess fat. Add remaining ingredients and salt to taste. (May also want to add 2 cups water). Cover and cook over medium heat approximately 30 minutes.
  2. Make a pan of cornbread, and a salad, and you have a meal.
