Ingredients
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 jalapeno pepper, seeded and chopped (optional)
- 1 Tbsp. vegetable oil
- 1 tsp. garlic powder
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 3/4 cup chicken broth
- 1 cup chopped plum tomato
- 8 oz. (about 10 slices)
- American cheese, torn or chopped
Directions
- Saute onion, bell pepper, and if desired, jalapeno in hot oil in a large skillet until tender.
- Add garlic powder and next 3 ingredients; cook, stirring occasionally, 5 minutes.
- Add tomato and cheese; reduce heat, and simmer 5 to 10 minutes or until cheese melts. Serve immediately, or chill and cook over low heat to reheat.
