Chile con Queso

Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 jalapeno pepper, seeded and chopped (optional)
  • 1 Tbsp. vegetable oil
  • 1 tsp. garlic powder
  • 1 tsp. ground cumin
  • 1/2 tsp. salt
  • 3/4 cup chicken broth
  • 1 cup chopped plum tomato
  • 8 oz. (about 10 slices)
  • American cheese, torn or chopped

Directions

  1. Saute onion, bell pepper, and if desired, jalapeno in hot oil in a large skillet until tender.
  2. Add garlic powder and next 3 ingredients; cook, stirring occasionally, 5 minutes.
  3. Add tomato and cheese; reduce heat, and simmer 5 to 10 minutes or until cheese melts. Serve immediately, or chill and cook over low heat to reheat.
