Ingredients
- 2 Tsp. olive oil
- 1/2 cup chopped onion
- 1 tsp. cumin
- 1 tsp. minced garlic
- 1/2 tsp. dried oregano
- 1 cup frozen corn
- 1/4 tsp. black pepper
- 1 (14 oz.) can vegetable broth
- 1 (15 to 19 oz.) can black beans, rinsed
- 1 (14 1/2 oz.) can diced tomatoes and green chiles with liquid
- Lime slices for garnish
Directions
- Heat olive oil in a large pot over medium-high heat. Add onion, cumin, garlic and oregano; cook 1 1/2 minutes. Stir in corn, pepper, broth, beans and tomatoes with liquid; bring to boil. Reduce heat; simmer 10 minutes.
- Serve with lime slices.
