Ingredients

  • 1 lemon, scrubbed
  • 1 orange, scrubbed
  • 5 whole cloves
  • 2 or 3 cardamom pods, lightly crushed
  • 2/3 cup granulated sugar
  • 2/3 cup water
  • 1 (3-inch) cinnamon stick
  • 1 (750 ml.) bottle dry red wine
  • 1/4 cup brandy

Directions

  1. Remove zest in wide strips from lemon and orange using a paring knife or vegetable peeler. Place the zests in a large saucepan, then juice the fruits into the pan.
  2. Combine the cloves and cardamom pods in a small piece of cheesecloth and tie corners together to create a bundle. Add bundle to saucepan, along with the sugar, water and cinnamon stick and stir to combine.
  3. Bring to a simmer over medium heat, stirring to dissolve sugar. Reduce heat and simmer, stirring occasionally, until mixture is syrupy thick, about 20 minutes.

  4. Stir in the wine and brandy and cook just until heated through; do not let mixture boil. Remove and discard cinnamon stick and spice bundle before serving.
