Mediterranean Chicken

Ingredients

  • 1 tbls olive oil
  • 2 lbs chicken breasts
  • 28 oz can diced tomatoes
  • 2 onions, chopped
  • 1/2 cup dry sherry
  • 6 tsp minced garlic
  • Juice of 2 lemons
  • 2 cinnamon sticks
  • 1 bay leaf
  • 1/2 tsp black pepper
  • 1 lb cooked broad noodles
  • 1/2 cup feta

Directions

  1. Heat oil in large skillet over medium heat. Add the chicken and lightly brown.

  2. Combine tomatoes with juice, onions, sherry, garlic, lemon juice, cinnamon sticks, bay leaf and pepper in crock pot. Add chicken. Cover and cook on LOW 8-10 hrs.

  3. Discard cinnamon sticks and bay leaf. Serve chicken and sauce over noodles. Sprinkle with cheese just before serving.
