Cannellini Minestrone Soup

Ingredients

  • 4 cups chicken broth
  • 14.5 oz can diced tomatoes
  • 12 oz can tomato-vegetable juice
  • 2 cups escarole, cut into thin strips
  • 1 cup chopped green onions
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped potatoes
  • 1/4 cup dried cannellini beans, sorted and rinsed
  • 2 tbls chopped fresh chives
  • 1 tbls chopped Italian parsley
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 oz uncooked ditalini pasta

Directions

  1. Place all ingredients except pasta in crock pot. Stir well to combine. Cover and cook on LOW 6-8 hrs.

  2. Add pasta and stir again. Cover and cook 20 minutes.
