Ingredients
- 4 cups chicken broth
- 14.5 oz can diced tomatoes
- 12 oz can tomato-vegetable juice
- 2 cups escarole, cut into thin strips
- 1 cup chopped green onions
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped potatoes
- 1/4 cup dried cannellini beans, sorted and rinsed
- 2 tbls chopped fresh chives
- 1 tbls chopped Italian parsley
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 oz uncooked ditalini pasta
Directions

Place all ingredients except pasta in crock pot. Stir well to combine. Cover and cook on LOW 6-8 hrs.

Add pasta and stir again. Cover and cook 20 minutes.
