Pasta Fagioli Soup

Ingredients

  • 2-14 oz cans beef broth
  • 15 oz can Great Northern beans, rinsed and drained
  • 14 oz can diced tomatoes
  • 2 zucchini, quartered lengthwise and sliced
  • 1 tbls olive oil
  • 1 1/2 tsp minced garlic
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 cup uncooked tubetti pasta
  • 1/2 garlic seasoned croutons
  • 1/2 cup grated Asiago
  • 3 tbls chopped fresh basil

Directions

  1. Combine broth, beans, tomatoes, zucchini, oil, garlic, dried basil and oregano in crock pot; mix well. Cover and cook on LOW 3-4 hrs.

  2. Stir in pasta. Cover and cook on LOW 1 hr or until pasta is tender.

  3. Serve soup with croutons and cheese. Garnish with fresh basil.
