Chili Verde

Ingredients

  • 3/4 lb boneless lean pork, cut into 1-inch cubes
  • 1 lb fresh tomatillos, husks removed, rinsed and coarsely chopped
  • 15 oz can Great Northern beans, rinsed and drained
  • 14.5 oz can chicken broth
  • 1 large onion, halved and thinly sliced
  • 4 oz can diced mild green chiles
  • 6 garlic cloves, chopped
  • 1 tsp ground cumin
  • Salt and black pepper
  • 1/2 cup lightly packed fresh cilantro, chopped

Directions

  1. Coat large skiller with nonstick spray. Heat over medium-high. Add pork; cook until browned on all sides.

  2. Combine pork and all remaining ingredients except cilantro in crockpot. Cover and cook on HIGH 3-4 hrs.

  3. Season to task with additional salt and pepper. Turn crock pot to LOW. Stir in cilantro and cook 10 minutes.
