Ingredients
- 3 cups vegetable stock
- 4 cups broccoli florets, chopped
- 1 cup onion, chopped
- 1 carrot, chopped
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 minced garlic cloves
- 3 oz. half-and-half
- 4 oz. shredded, reduced fat cheddar cheese
- 1/4 cup parsley (optional)
Directions
- Combine vegetable stock, broccoli, onion, carrot, salt, pepper and garlic in large saucepan and bring to a boil. Reduce heat and simmer until broccoli is tender.
- Turn off heat. Mix soup with hand blender (or pour into blender) until smooth. Immediately stir in creamer, cheese and parsley, then serve.
