Broccoli Salad

Serves 6 people

Ingredients

  • 2 heads of broccoli, chopped
  • 1 large carrot, grated
  • 1 apple, chopped
  • 1/4 cup onion, chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup dries cranberries
  • Dressing:
  • 1 cup plain Greek yogurt
  • 2 Tbsp. lemon juice
  • 1 tsp. honey
  • Sea salt and pepper to taste

Directions

  1. In a small bowl, combine all the ingredients for the dressing and mix thoroughly. Add salt and pepper to taste, then chill.
  2. Finely chop broccoli (remove stems), apple, onion, and walnuts and combine in a medium-sized bowl.
  3. Grate carrot into chopped mixture, then add cranberries.
  4. Mix in dressing and serve or let salad chill for 30 minutes.
