Ingredients
- 2 heads of broccoli, chopped
- 1 large carrot, grated
- 1 apple, chopped
- 1/4 cup onion, chopped
- 1/2 cup walnuts, chopped
- 1/4 cup dries cranberries
- Dressing:
- 1 cup plain Greek yogurt
- 2 Tbsp. lemon juice
- 1 tsp. honey
- Sea salt and pepper to taste
Directions
- In a small bowl, combine all the ingredients for the dressing and mix thoroughly. Add salt and pepper to taste, then chill.
- Finely chop broccoli (remove stems), apple, onion, and walnuts and combine in a medium-sized bowl.
- Grate carrot into chopped mixture, then add cranberries.
- Mix in dressing and serve or let salad chill for 30 minutes.
